He applies these consistently in his signature restaurant, Memories, interpreting the new Swiss alpine cuisine in a bold, minimalist style to create authentic, holistic taste experiences that are closely linked with nature. His menus vary with the changing seasons. It is for this reason that the restaurant offers a seasonal menu consisting of several surprise taste experiences in place of an à la carte menu. Memories is an oasis of comfort; a return to the origins of hospitality. A conscious haven of peace, which uncompromisingly unites quality, style and nature.
